COTTAGE CHEESE AND TOMATOES

Ingredients

  • 1 cup cottage cheese, low fat
  • 1 tomato, sliced
  • 1 tablespoon dressing
  • DRESSING
  • 3 cloves garlic, crushed
  • 3 tbsp. chopped fresh basil or 1 tbsp. dried basil
  • 1/2 tsp. oregano
  • 1 tbsp. parsley
  • 1/2 teaspoon sea salt (or to taste)
  • pepper to taste
  • 1/4 c. balsamic vinegar
  • 1/4 c. red wine vinegar
  • 1 1/4 c. olive oil
  • In a medium bowl, whisk all above ingredients until well blended. Then follow salad directions.

Instructions

  1. Arrange sliced tomatoes on a plate and drizzle with dressing.
  2. Serve cottage cheese on the side.

Ingredients

  • 6 ounces very thinly sliced deli turkey
  • 3/4 cup salsa (click here for recipe) or grilled vegetables
  • 18 large egg whites or 2 1/4 cups liquid egg white or egg substitute (see note below)
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons grated low-fat Cheddar cheese

Instructions

  1. Preheat the oven to 400ºF. Lightly coat each cup of a standard-sized nonstick muffin pan with olive oil cooking spray.
  2. Line each muffin cup with 1/2 ounce of the turkey. There will probably be a little excess extending from the top of each cup. Spoon 1 tablespoon of the salsa or grilled vegetables into each cup.
  3. Measure 3 tablespoons of the egg whites or egg substitute into each muffin cup. (After the first "muffin," you can pour the whites from the liquid measuring cup to the same level as the fist muffin cup, rather than measuring 3 tablespoons each time.)
  4. Place the muffin pan in the oven and bake for 10 to 12 minutes, or until the eggs are puffed and the center is set. Carefully remove the baked eggs from the pan and place 2 egg cups on each serving plate. Garnish with the cilantro and cheese
  5. Note: If Using fresh eggs: Separate 18 whites into a medium mixing bowl Add 1/2 teaspoon salt and whisk lightly. Transfer to a liquid measuring cup. Let stand while you prepare the rest of the ingredients.

Creamy Southwest Chicken

 

Your family will love this Creamy Low Carb Southwest Chicken dish. This is one you can have on the table in 20 minutes, start to finish, using canned green chiles and shredded cheese. The chiles are mild, so this isn’t a spicy dish. Adapted from Laura Dolson, this recipe serves 6-8, depending on what else you serve with it.

Creamy Southwest Chicken

PROTEIN, VEGETABLES, HEALTHY FATS

Ingredients

  • 1 1/2 lb boneless skinless chicken breasts- (cut in bite size pieces)
  • 1/4 C minced onion
  • 2 cloves minced garlic (fresh, jarred or in tube)
  • 6-8 oz canned chopped green chiles (depending on can size) or Rotel Tomatoes
  • Optional: small amt of chicken stock or Better than Boullion
  • 1/4 C heavy cream
  • 1/3 C shredded low fat cheese (cheddar or jack)
  • 1 Tbls olive oil
  • salt, pepper (for extra heat use Adobo Seasoning)

Instructions

  1. Heat large skillet with oil.
  2. Cut chicken into bite sized pieces and season with salt and pepper (or Adobo Seasoning). Saute' till brown on both sides, adding onions about half way through.
  3. Add garlic and cook for another minute.
  4. If needed, deglaze the pan with a little water or chicken stock. Add 1 teaspoon Better Than Bouillon if desired.
  5. Add green chiles and cream, and simmer until chicken is done and sauce is thickened.
  6. Top with cheese, and serve when cheese melts.
  7. Optional garnish: avocado slices; cilantro

Freezer Bag Meal Assembly: Pre-cut Chicken in Quart size baggie, Chopped Onion - snack size baggie, garlic -snack size baggie, Chilis and Cream- quart size baggie, Cheese- quart size baggie. Mark all baggies. Place ALL in Labeled Gallon Freezer Bag.
